Healthy Homemade Mince Pies

Do you want to try making mince pies this year? I guarantee you, it’s worth it to put on your apron and bake these delicious holiday treats!

This dish is really simple to prepare and ideal for involving the entire family. You can change the ingredients in a homemade recipe to suit different tastes and food preferences. You’ll not want to purchase a mince pie again after one mouthful of a homemade shortcrust pastry version.

I hope you will love it! Best enjoyed warm with a little vanilla ice cream! 😍⁣

For the vegan version, you can top it with plant-based ice creams. 

𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒⁣ (makes 12-14)👩🏻‍🍳 ⁣

𝐅𝐢𝐥𝐥𝐢𝐧𝐠:⁣

✔️ 2 apples, peeled & diced⁣

✔️ 300g mixed dried fruit ⁣

✔️ Juice & zest of 1 orange⁣

✔️ 1 tbsp maple syrup⁣

✔️ 1 tsp cinnamon⁣

✔️ 1 tsp mixed spice⁣

✔️ ¼ tsp nutmeg⁣

𝐏𝐚𝐬𝐭𝐫𝐲:⁣

✔️ 200g wholemeal flour⁣

✔️ 100g butter, cubed⁣

✔️ 1 tbsp caster sugar⁣

✔️ 6 tbsp water⁣

𝐌𝐄𝐓𝐇𝐎𝐃⁣ 🥣 ⁣

1️⃣ Preheat the oven to 180°C and lightly grease a muffin tin tray.⁣

2️⃣ Add all the filling ingredients to a medium-sized saucepan and heat on medium, stirring occasionally for 10-15 minutes until softened and the liquid has reduced. Leave to cool.⁣

3️⃣ Combine the pastry ingredients in a mixer, or by hand until combined and formed a dough. Cover in cling film or baking parchment and refrigerate for 20 minutes.⁣

4️⃣ When done, flour a worktop (and a rolling pin) and start to roll out until approx 0.5cm thick. Use a circular cutter (or glass!) that’s slightly larger than the circumference of the muffin tin hole to create the base.⁣

5️⃣ Place the pastry in the holes and spread around the edges to cover the bottom and sides. Keep re-rolling to fill all the holes + 12 tops (star or shape of choice!). ⁣

6️⃣ Add the filling to around ¾ full and then top with the stars (I used two different star sizes, one on top of each other). ⁣

7️⃣ Beat 1 egg and lightly brush the topping and then sprinkle a little brown sugar on top (optional!).⁣

8️⃣ Bake in the oven for 25-30 minutes until golden on top, and the pastry feels firm to touch.⁣

9️⃣ Leave to cool, and then carefully remove from the muffin tray – they should lift out pretty easily!⁣
