With December almost gone (this month has felt like a whirlwind!), I’m still into the festive spirit, and I love nothing better than the smell of warm gingerbread in the oven!
As a little bit of a different way to enjoy these flavours, I wanted to make a super easy cook and prepare French baked toast! You can even make this the night before you want to enjoy it, let the eggs/spices soak overnight and put straight in the oven the next morning – or you can simply bake whenever and warm up, it works just as well!
In the oven, the maple syrup caramelises, adding flavour and chewiness. It does not get as crunchy as pan-fried French toast and remains softer throughout. Warming spices add a depth of flavour that is wintery, and comforting, and when combined with maple syrup, this is some pretty tasty French toast.
As this recipe only contains a small amount of added sugar and a source of fibre from the wholemeal bread, this is perfect for a delicious breakfast – simply serve on its own with fruit and/or yoghurt! Enjoy! 😍
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒 👩🏻🍳 (Serves 2)
✔️ 4 small slices of wholemeal bread
✔️ 2 eggs
✔️ ¼ cup milk of your choice
✔️ 1 tsp maple syrup
✔️ 1 ½ tsp gingerbread spice
𝐆𝐢𝐧𝐠𝐞𝐫𝐛𝐫𝐞𝐚𝐝 𝐬𝐩𝐢𝐜𝐞
✔️ 1 tsp cinnamon
✔️ 1 tsp ginger
✔️ ½ tsp mixed spice
✔️ ¼ tsp ground cardamom
✔️ ¼ tsp nutmeg
𝐌𝐄𝐓𝐇𝐎𝐃 🥣
1️⃣ Preheat the oven to 180c and lightly grease a small-medium ovenproof dish with a little oil.
2️⃣ Slice the bread diagonally so you have 8x triangle shapes. Lay one slice marginally on top of one another horizontally in the dish.
3️⃣ Meanwhile, add the eggs, milk & maple syrup to a jug and whisk to combine.
4️⃣ Add the gingerbread spices into a small bowl and mix them together. Add 1 ½ tsp of the spice mix to the jug with the eggs/milk. Whisk again to combine.
5️⃣ Lightly spray the bread with a little oil and then pour over the egg mixture – you may have to lift up some of the bread slices slightly to get in between the pieces.
Optional: Soak in the fridge for 1hr + or overnight, or you can put it in the oven straight away.
6️⃣ Bake for 20 minutes until the crusts are a little crunchy/brown on top and the bread feels spongy.
7️⃣ Serve warm or keep in the fridge to enjoy the next day!
