Summery Salmon & Avocado Rainbow Salad 

This recipe is super quick to whip up, looks impressive and is delicious too.

In order to create a satisfying salad, you need to make sure that it’s balanced to include all of the major food groups – carbs, protein, healthy fats and fibre too. This recipe includes all of these, and is packed with plants (hello phytonutrients!), as well as essential healthy fats including omega 3 from the oily fish.

Did you know that for health we should aim to eat 2 portions of fish a week, one of which is oily (for omega 3 fatty acids), such as salmon? And for healthy seafood, ASC is the trustworthy label to look out for. ASC meets the highest standards to protect and restore oceans, coasts and wildlife.

INGREDIENTS (Serves 2) 🧑‍🍳

✔️ 2 x ASC Scottish salmon fillets* 

✔️ 1 x pack microwavable quinoa or other wholegrain such as rice

✔️ 2 x handfuls of purple & green salad leaves

✔️ 1/4 cucumber, thinly sliced

✔️ 2 x handfuls of cherry tomatoes, halved

✔️ 1 x large handful of pitted olives

✔️ 1/2 a large or 1 small/medium avocado, sliced

*All Sainsbury’s Scottish salmon is sourced from dedicated farms around Scotland chosen for their ideal conditions. Salmon raised in ASC farms have the room to move in fresh, clean waters, meaning it’s better for the health of the environment and better for the fish’s welfare.

For the dressing:

✔️ Juice of 1/2 a lemon

✔️ 1 small handful fresh basil, finely chopped

✔️ 1 tablespoon of extra virgin olive oil

METHOD 🥣

1️⃣ Place the salmon in an oven-proof dish and cook at 180°C/356°F for 12-15 minutes until cooked through – or use an air-fryer, microwave or frying pan and cook accordingly. Remove the skin after cooking and divide into pieces.

2️⃣ Heat the quinoa in the microwave according to packet instructions (usually 2 minutes!)

3️⃣ Divide the salad leaves, tomatoes, cucumber, and olives between two bowls, and top with the quinoa, salmon pieces, and avocado.

4️⃣ Combine the lemon juice, basil, and olive oil in a small dish or jug to make a dressing and drizzle over each salad.

5️⃣ Enjoy (alfresco ideally!)
